I love bacon. Period. I fear nitrates and nitrites in meats. Maybe I should say feared. Chris Kresser points out some things you should know about them. For example, most of the nitrites we ingest from food (93%), come from vegetables. Holy cats! 4 servings of celery or beets has more nitrites than 467 hot dogs. Holy beets! To top it off, our bodies create far more nitrites than we could ever eat. Salivary nitrites account for 70-90% of our total nitrite exposure. Holy spit!
Now that all seems like good news to bacon lovers everywhere, you should still consider getting your bacon from pigs that eat a healthier mix of foods than grains like corn. You are looking for quality pig for the best meat candy.
My take: proceed with caution and use your brain to determine what is best for you.
